This is the pasta dish that I had last night. It serves 3 adults.
150g pasta
1 red pepper
1 courgette
1 onion
1 tbsp olive oil
30g tomato ketchup
1 tsp stock powder
Chop the vegetables into small pieces and fry in the olive oil until soft. Blend them with the ketchup and stock powder. I tend to add several tbsp water, this will depend on how thick you want the sauce. When the pasta is cooked, just pour over the top.
One serving (one third of the food) is approximately 250 calories. So you have enough calories left to add extra vegetables and some protein such as fish, meat or a vegetarian alternative.

I think ketchup can have a high sugar level, would not chopped tomatoes be less calories?
Yes it does, but the children do not like tomato which is too acidic and tinned tomatoes and tomato puree is very acidic. That is why I make the pasta sauce - they will not eat tomato pasta sauce. I am not sure how the calories would compare. Of course missing out the olive oil would make a huge difference calorie wise, but the taste is massively different without it.
